Pecan Devil's Food Cake
| Yield: 2 - 8" Layers | |
| 1-1/4 cups sugar | 1-1/2 cups sifted cake flour |
| 1-1/4 teaspoon baking soda | 1/2 cup cocoa |
| 2/3 cup shortening | 1 teaspoon salt |
| 1 teaspoon vanilla | 1 cup buttermilk |
| 1/2 cup chopped Pecans | 2 eggs, unbeaten |
Have all ingredients at room temperature. Sift dry ingredients together into mixing bowl. Add shortening and buttermilk and vanilla. Mix 200 strokes by hand (or 2 minutes on electric mixer at low speed). Scrape from sides of bowl while mixing. Add eggs and beat 100 strokes (or 1 minute on electric mixer). Add Pecans and beat 100 strokes (or 1 minute on electric mixer). Pour into 2 greased 8 - inch cake pans and bake in moderate oven (350° F.) for 30 minutes. Frost as desired.
