Pecan Devil's Food Cake


Yield: 2 - 8" Layers
1-1/4 cups sugar 1-1/2 cups sifted cake flour
1-1/4 teaspoon baking soda 1/2 cup cocoa
2/3 cup shortening 1 teaspoon salt
1 teaspoon vanilla 1 cup buttermilk
1/2 cup chopped Pecans 2 eggs, unbeaten

Have all ingredients at room temperature. Sift dry ingredients together into mixing bowl. Add shortening and buttermilk and vanilla. Mix 200 strokes by hand (or 2 minutes on electric mixer at low speed). Scrape from sides of bowl while mixing. Add eggs and beat 100 strokes (or 1 minute on electric mixer). Add Pecans and beat 100 strokes (or 1 minute on electric mixer). Pour into 2 greased 8 - inch cake pans and bake in moderate oven (350° F.) for 30 minutes. Frost as desired.
