Pecan Ham Roll-ups
| 2 cups mashed sweet potatoes | 3 tablespoons sugar |
| 3 tablespoons melted fat | 1/4 cup chopped Pecans |
| 1/2 cup crushed pineapple | 6 slices of smoked or boiled ham |
| 1/2 cup crumbs | 3/4 cup pineapple juice |
Combine sweet potatoes, fat, pineapple, crumbs, and sugar. Add Pecans, and mix well. Spread this filling on the smoked or boiled ham, cut 1/8 inch thick. Roll as for jelly roll, fasten with toothpicks, or tie. Place in baking dish, and cover with pineapple juice. Bake in 350° F. oven, 1 hour for smoked or 20 minutes for boiled ham, baste frequently. Serves 3
