Pecan Spice Cake


Yield: 2 - 8" Layers
1/2 teaspoon nutmeg
2 cups sifted cake flour 1/2 teaspoon allspice
1/2 teaspoon salt 1 cup brown sugar
1 teaspoon baking powder 1/2 cup shortening
1/2 teaspoon baking soda 3/4 cup buttermilk
1/8 teaspoon ginger 2 eggs
1 teaspoon cinnamon 1/2 cup chopped Pecans

Have all ingredients at room temperature. Sift flour, salt, baking powder, soda, and spices together into mixing bowl. Add sugar, shortening, and buttermilk. Beat 200 strokes (or 2 minutes in electric mixer at low speed), scraping the bowl frequently. Add eggs and beat 100 strokes (or 1 minute). Add Pecans and beat 100 strokes (or 1 minute). Pour into 2 greased 8 - inch cake pans and bake in a moderate oven (350° F.) for 30 minutes. Remove from pans. When cool, ice with Orange Pecan Frosting. See following recipe for frosting.
