Pecan Spice Cake
| Yield: 2 - 8" Layers | |
| 1/2 teaspoon nutmeg | |
| 2 cups sifted cake flour | 1/2 teaspoon allspice |
| 1/2 teaspoon salt | 1 cup brown sugar |
| 1 teaspoon baking powder | 1/2 cup shortening |
| 1/2 teaspoon baking soda | 3/4 cup buttermilk |
| 1/8 teaspoon ginger | 2 eggs |
| 1 teaspoon cinnamon | 1/2 cup chopped Pecans |
Have all ingredients at room temperature. Sift flour, salt, baking powder, soda, and spices together into mixing bowl. Add sugar, shortening, and buttermilk. Beat 200 strokes (or 2 minutes in electric mixer at low speed), scraping the bowl frequently. Add eggs and beat 100 strokes (or 1 minute). Add Pecans and beat 100 strokes (or 1 minute). Pour into 2 greased 8 - inch cake pans and bake in a moderate oven (350° F.) for 30 minutes. Remove from pans. When cool, ice with Orange Pecan Frosting. See following recipe for frosting.
