Pecan Waffles
| Yield: 6-8 Waffles | |
| 3/4 cup chopped Pecans | |
| 2 cups sifted all-purpose flour | 2 eggs, separated |
| 4 teaspoons baking powder | 1-1/2 cups milk |
| 1/4 teaspoon salt | 6 tablespoons shortening, melted |
Sift together dry ingredients and add Pecans. Beat egg yolks until light; combine with milk and melted shortening and add to dry ingredients, mixing just until smooth. Beat egg whites until stiff and fold into batter. Bake in hot waffle iron.
